- Sprinkle 1 cup diced peppers and 3/4 cup diced onions over the potatoes. Sauté until softened, about 4-5 minutes.
- Push vegetables to the center and pour 6 beaten eggs evenly over the mixture. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Gently scramble and fold until eggs are just set, 3-5 minutes.
- Turn off the heat. Sprinkle 1 cup grated Pepper Jack over the scramble. Let melt for 1 minute.
