The difference between golden pancakes and burnt pancakes is usually
heat---not the recipe.

Heat is Your Main Ingredient

Steel stores heat. Give your griddle time to preheat before adding food.

Three Working Zones

  • High: Searing burgers and steaks.
  • Medium: Pancakes, vegetables, grilled sandwiches.
  • Low: Toasting buns or keeping food warm.

Move food instead of constantly changing the burner.

Wind Matters

Wind steals heat from a portable griddle. Position the cooking surface
so the burner is protected whenever possible.

When in doubt, start lower. You can always add heat.
