- 4 cups frozen shredded hash browns (about 16 ounces)
- 12 ounces breakfast sausage, raw or cooked, crumbled or chopped
- 1 medium onion, diced (about 1 cup)
- 1 medium bell pepper, diced (about 1 cup)
- 4 large eggs
Instructions
- Preheat the griddle to medium.
- Brown 12 ounces sausage and move aside.
- Spread 4 cups hash browns onto the griddle and cook until golden and crisp, about 8–10 minutes, flipping once.
- Add 1 cup diced onion and 1 cup diced bell pepper to the potatoes; sauté until softened, about 4 minutes.
- Fold sausage back in and mix well.
- Make 4 wells in the hash. Crack 4 eggs into the wells. Cook until eggs are set to your liking.
- Serve hot.
Doneness
Sausage cooked from raw should reach 160°F. Eggs should be set.
