Around the Campfire

Breakfast hash is a classic campsite griddle meal because it turns a few basic ingredients into one filling plate. It is flexible, hearty, and easy to customize at the table.

Why This Recipe Works

The potatoes need time and space to crisp, sausage needs browning, and eggs belong at the end. Cooking in stages keeps the hash from turning into one soft pile.

Quick Facts

  • Serves: 4
  • Heat zone: Medium
  • Best for: Hearty breakfasts, leftovers, family mornings
  • Teaches: Staged hash cooking

Shopping List

  • Frozen hash browns
  • Breakfast sausage
  • Onion
  • Bell pepper
  • Eggs

Home Prep

Slice onion and pepper before the trip. Pre-cook sausage if you want a faster morning.

Cooler Packing

Keep sausage and eggs cold. Keep potatoes sealed and dry.

Equipment

  • Blackstone griddle
  • Spatula
  • Tongs

Heat Zones

Use medium heat and keep the potatoes spread thin — too cool and they steam, too hot and the outside browns before the inside is tender. Keep a gentler area for eggs.

Ingredients

  • 4 cups frozen shredded hash browns (about 16 ounces)
  • 12 ounces breakfast sausage, raw or cooked, crumbled or chopped
  • 1 medium onion, diced (about 1 cup)
  • 1 medium bell pepper, diced (about 1 cup)
  • 4 large eggs

Instructions

  1. Preheat the griddle to medium.
  2. Brown 12 ounces sausage and move aside.
  3. Spread 4 cups hash browns onto the griddle and cook until golden and crisp, about 8–10 minutes, flipping once.
  4. Add 1 cup diced onion and 1 cup diced bell pepper to the potatoes; sauté until softened, about 4 minutes.
  5. Fold sausage back in and mix well.
  6. Make 4 wells in the hash. Crack 4 eggs into the wells. Cook until eggs are set to your liking.
  7. Serve hot.

Doneness

Sausage cooked from raw should reach 160°F. Eggs should be set.

Common Mistakes

  • Adding eggs too early.
  • Crowding potatoes.
  • Stirring before browning starts.

Serving Suggestions

Serve with tortillas, toast, salsa, hot sauce, or fruit.

Variations

  • Add cheese.
  • Add bacon.
  • Use sweet potatoes.

Dietary Adaptations

  • Gluten-free: Verify sausage and seasonings.
  • Dairy-free: Skip cheese and cook with oil.
  • Vegetarian: Skip sausage and add beans or vegetables.

Scaling

Cook potatoes in batches for larger groups.

Weather Notes

This holds heat well in cool or windy weather.

Leftovers

Use leftovers in breakfast burritos, quesadillas, bowls, or wraps.

Kid Helper Tasks

Kids can choose toppings and set tortillas away from the griddle.

Dragonfly Tip

Crisp the potatoes before combining everything else.

Dragonfly Challenge

Serve one plate as hash and one as a burrito. Pick the better camp breakfast.
