Instructions

  1. Preheat the griddle to medium.
  2. Add 8 ounces chorizo and cook, breaking up, until browned and cooked through (160°F if raw).
  3. Stir in 1 cup black beans and 1/2 cup diced green chiles. Warm for 2–3 minutes.
  4. Crack and scramble 8 eggs in a clean griddle zone until just set.
  5. Fold cooked chorizo, beans, and chiles into the eggs.
  6. Sprinkle with 1 cup shredded Pepper Jack cheese, let melt, and serve.
