Around the Campfire
Southwest breakfast scramble is a hearty camp morning meal with eggs, chorizo, beans, chiles, and cheese. It is filling enough for a hiking day and flexible enough to turn into wraps.
Why This Recipe Works
Chorizo browns first, beans and chiles warm next, and eggs finish the scramble. Staging keeps the eggs from overcooking while the other ingredients heat through.

- 1 cup canned black beans, drained and rinsed
- 1 cup shredded Pepper Jack cheese
- 1/2 cup diced canned green chiles (mild or hot)
Instructions
- Preheat the griddle to medium.
- Add 8 ounces chorizo and cook, breaking up, until browned and cooked through (160°F if raw).
- Stir in 1 cup black beans and 1/2 cup diced green chiles. Warm for 2–3 minutes.
- Crack and scramble 8 eggs in a clean griddle zone until just set.
- Fold cooked chorizo, beans, and chiles into the eggs.
- Sprinkle with 1 cup shredded Pepper Jack cheese, let melt, and serve.
Doneness
Eggs should be set and chorizo should reach 160°F if raw.
Common Mistakes
- Adding eggs too early.
- Overcooking the scramble.
- Letting beans add too much moisture.
Serving Suggestions
Serve with tortillas, salsa, potatoes, fruit, or coffee.
Variations
- Add 1/2 cup diced bell pepper and 1/2 cup diced onion when browning chorizo.
- Serve as breakfast burritos.
- Use cheddar instead of Pepper Jack.
Dietary Adaptations
- Gluten-free: Verify chorizo and toppings.
- Dairy-free: Skip cheese.
- Vegetarian: Skip chorizo and add more beans or peppers.
Scaling
Cook chorizo and vegetables first, then scramble eggs in batches.
Weather Notes
This holds heat well in cooler weather.
Leftovers
Use leftovers in wraps, bowls, or quesadillas.
Kid Helper Tasks
Kids can set tortillas and toppings away from the griddle.
Dragonfly Tip
Eggs go last. Everything else can wait better than eggs can.
Dragonfly Challenge
Serve one portion as a scramble and one in a tortilla. Pick the better camp breakfast.
