  • 6 cups tortilla chips
  • 8 large eggs, beaten
  • 8 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 1 jalapeño, thinly sliced (optional)

Instructions

  1. Cook 8 slices bacon on the griddle until crisp, or warm pre-cooked bacon. Crumble.
  2. In a bowl, beat 8 large eggs. Pour onto the griddle and scramble gently until just set.
  3. Spread 6 cups tortilla chips on a foil pan or tray (or on a cooler zone of the griddle).
  4. Top chips with scrambled eggs, crumbled bacon, and sprinkle 1 1/2 cups shredded cheddar evenly on top.
  5. Place the tray or pan back on the griddle (or cover loosely with foil) and heat for 2-3 minutes, just until cheese melts.
  6. Scatter 1 jalapeño, thinly sliced (optional), over the top if desired. Serve immediately.
