Around the Campfire
Rosemary potatoes are a sturdy campsite side that can sit beside almost any dinner. They are simple, familiar, and especially good with steak, chicken, pork chops, or salmon.
Why This Recipe Works
The Blackstone gives potatoes enough room to brown while the rosemary butter finishes the flavor near the end.

Cooler Packing
Keep cooked or cut potatoes cold in a sealed container. Keep butter cold.
Equipment
- Blackstone griddle
- Spatula
- Tongs
Heat Zones
Use medium heat and keep the potatoes spread thin — too cool and they steam, too hot and the outside browns before the inside is tender.
Ingredients
- 2 pounds baby potatoes, halved
- 2 tablespoons fresh rosemary, finely chopped
- 3 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Preheat the griddle to medium.
- Place 2 pounds baby potatoes in a single layer on the griddle. Cook, turning occasionally, until browned and tender, about 15–18 minutes.
- Add 3 tablespoons butter and 2 tablespoons rosemary to the potatoes for the last 2–3 minutes of cooking. Toss to coat and melt butter.
- Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Serve hot.
Doneness
Potatoes should be tender inside and browned outside.
