Around the Campfire

Rosemary potatoes are a sturdy campsite side that can sit beside almost any dinner. They are simple, familiar, and especially good with steak, chicken, pork chops, or salmon.

Why This Recipe Works

The Blackstone gives potatoes enough room to brown while the rosemary butter finishes the flavor near the end.

Quick Facts

  • Serves: 4
  • Heat zone: Medium
  • Best for: Steak nights, chicken dinners, hearty sides
  • Teaches: Browning potatoes before finishing

Shopping List

  • Baby potatoes
  • Rosemary
  • Butter
  • Salt and pepper

Home Prep

Halve or par-cook potatoes before the trip for faster camp cooking.

Cooler Packing

Keep cooked or cut potatoes cold in a sealed container. Keep butter cold.

Equipment

  • Blackstone griddle
  • Spatula
  • Tongs

Heat Zones

Use medium heat and keep the potatoes spread thin — too cool and they steam, too hot and the outside browns before the inside is tender.

Ingredients

  • 2 pounds baby potatoes, halved
  • 2 tablespoons fresh rosemary, finely chopped
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat the griddle to medium.
  2. Place 2 pounds baby potatoes in a single layer on the griddle. Cook, turning occasionally, until browned and tender, about 15–18 minutes.
  3. Add 3 tablespoons butter and 2 tablespoons rosemary to the potatoes for the last 2–3 minutes of cooking. Toss to coat and melt butter.
  4. Sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Serve hot.

Doneness

Potatoes should be tender inside and browned outside.

Common Mistakes

  • Adding butter too early.
  • Crowding potatoes.
  • Using large uncut potatoes.

Serving Suggestions

Serve with steak, chicken, salmon, pork chops, or vegetables.

Variations

  • Add 2 cloves garlic, minced, with the butter and rosemary.
  • Add 1/2 cup diced onions along with the potatoes.
  • Substitute 2 pounds sweet potatoes, cubed, for regular potatoes.

Dietary Adaptations

  • Gluten-free: As written.
  • Dairy-free: Use oil or dairy-free butter.
  • Vegan: Use oil or plant-based butter.

Scaling

Cook in batches for larger groups.

Weather Notes

Cold or windy weather may extend cook time. Smaller pieces help.

Leftovers

Use leftovers in breakfast hash, wraps, bowls, or quesadillas.

Kid Helper Tasks

Kids can sprinkle rosemary or salt after cooking.

Dragonfly Tip

Rosemary goes in late enough to stay fragrant.

Dragonfly Challenge

Try one batch with rosemary and one with garlic. Pick the better camp potato.
