Instructions

  1. Preheat the griddle to medium.
  2. Add 2 tablespoons oil or butter to the griddle. Spread diced potatoes in a thin layer and cook for 15-18 minutes, turning every few minutes, until potatoes are browned and tender.
  3. Sprinkle on 6 slices cooked, crumbled bacon and mix gently; allow to warm through, about 2 minutes.
  4. Top evenly with 1 cup shredded cheddar cheese.
  5. Let cheese melt for 2-3 minutes, covering briefly with a foil pan if needed.
  6. Finish with 4 sliced green onions scattered over the top and serve immediately.
