Around the Campfire
Loaded griddle fries are a fun campsite side for burger night, hot dog night, or any meal that needs something easy to share.
Why This Recipe Works
The Blackstone gives fries room to crisp in a wide layer. Toppings go on after the fries are hot so the base keeps its texture.
Quick Facts
- Serves: 4
- Heat zone: Medium
- Best for: Burger nights, hot dogs, shared sides
- Teaches: Crisp first, top second
Shopping List
- Frozen fries
- Cheddar
- Bacon
- Green onions
Home Prep
Cook bacon ahead if desired. Portion cheese and green onions separately.
Cooler Packing
Keep bacon and cheese cold. Keep fries frozen or very cold until cooking.
Equipment
- Blackstone griddle
- Spatula
- Tongs
Heat Zones
Use medium heat and keep the potatoes spread thin — too cool and they steam, too hot and the outside browns before the inside is tender.
Ingredients
- 1.5 pounds (about 24 ounces) frozen French fries (straight or crinkle cut)
- 1 cup shredded sharp cheddar cheese
- 4 slices bacon, cooked and crumbled
- 2 green onions, thinly sliced
Instructions
- Preheat the griddle to medium.
- Add 1.5 pounds frozen fries in a single layer. Cook, turning occasionally, until fries are hot and crisp, about 18-20 minutes.
- Sprinkle 1 cup cheddar and 4 slices crumbled bacon evenly over the fries.
- Cover with a melting dome or foil pan to help the cheese melt. Warm for 2-3 minutes until cheese is melted and toppings are heated through.
- Remove from heat, sprinkle with 2 sliced green onions, and serve immediately.
Doneness
Fries should be hot and crisp before toppings are added.
Common Mistakes
- Adding cheese before fries crisp.
- Crowding fries.
- Waiting too long to serve.
Serving Suggestions
Serve with burgers, hot dogs, chicken, or chili. Offer toppings like jalapenos, burger sauce, or pepper jack cheese at the table if desired.
Variations
- Add jalapenos.
- Add burger sauce.
- Use pepper jack.
Dietary Adaptations
- Gluten-free: Verify fries and toppings.
- Dairy-free: Skip cheese.
- Vegetarian: Skip bacon.
Scaling
Cook fries in batches for larger groups.
Weather Notes
Wind slows crisping, so let the griddle recover between batches.
Leftovers
Best fresh, but leftovers can become breakfast hash.
Kid Helper Tasks
Kids can sprinkle cheese and green onions away from the griddle.
Dragonfly Tip
Fries must be crisp before they get topped.
Dragonfly Challenge
Try one tray with cheddar and one with pepper jack. Pick the camp favorite.
