Instructions

  1. Preheat the griddle to medium (325–375°F). Add 2 tablespoons oil and spread over the surface.
  2. Arrange 1 (32-ounce) bag frozen tater tots in a single layer. Cook for 16–20 minutes, turning often, until crisp and golden.
  3. Cook 8 slices bacon on a separate area of the griddle until crisp, then chop or crumble.
  4. Crack 8 large eggs onto the griddle, scramble gently, and cook until just set (2–4 minutes).
  5. Combine the cooked tots, chopped bacon, scrambled eggs, and 1 1/2 cups shredded cheddar cheese on the griddle. Toss gently to melt the cheese.
  6. Transfer to a platter or foil pan. Sprinkle with 4 sliced green onions and serve hot.
