Instructions
- Preheat the Blackstone to medium.
- Add optional cooked sausage, bacon, potatoes, peppers, or onions to the griddle to heat through, stirring occasionally.
- Crack 8 eggs into a bowl and whisk. Pour eggs onto the griddle and gently scramble until just set.
- While eggs cook, place 8 tortillas on the cooler side of the griddle to warm, turning once.
- Divide eggs among the tortillas. Top each with about 2 tablespoons shredded cheese and any hot fillings.
- Serve immediately.
