Around the Campfire

Breakfast tacos are one of the easiest ways to make a simple egg breakfast feel like a meal everyone gets to customize. They are fast, flexible, and especially useful when you have a few small leftovers to use up.

This recipe teaches flexible camp cooking: build one base, then let toppings do the work.

Why This Recipe Works

The Blackstone warms tortillas, cooks eggs, and reheats fillings on one surface. A cooler zone keeps tortillas soft while the eggs finish.

Quick Facts

  • Serves: 4
  • Prep time: 10 minutes
  • Cook time: 15 minutes
  • Heat zone: Medium
  • Best for: Custom breakfasts, leftover use, quick mornings
  • Teaches: Flexible assembly

Shopping List

  • Eggs
  • Tortillas
  • Cheese
  • Salsa
  • Optional bacon, sausage, potatoes, peppers, or onions

Home Prep

Chop toppings at home. Pack salsa and cheese in small containers. Pre-cook meat if you want the fastest breakfast.

Cooler Packing

Keep eggs, cheese, salsa, and cooked fillings cold. Store tortillas separately so they stay dry.

Equipment

  • Blackstone griddle
  • Spatula
  • Tongs
  • Small containers for toppings

Heat Zones

Use medium heat for eggs and fillings. Warm tortillas on the cooler side.

Ingredients

  • 8 large eggs
  • 8 small (6-inch) flour or corn tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup cooked breakfast sausage or bacon, chopped (optional)
  • 1 cup cooked diced potatoes (optional)
  • 1/2 cup diced bell pepper (optional)
  • 1/4 cup diced onion (optional)

Instructions

  1. Preheat the Blackstone to medium.
  2. Add optional cooked sausage, bacon, potatoes, peppers, or onions to the griddle to heat through, stirring occasionally.
  3. Crack 8 eggs into a bowl and whisk. Pour eggs onto the griddle and gently scramble until just set.
  4. While eggs cook, place 8 tortillas on the cooler side of the griddle to warm, turning once.
  5. Divide eggs among the tortillas. Top each with about 2 tablespoons shredded cheese and any hot fillings.
  6. Serve immediately.

Doneness

Eggs should be set and fillings hot throughout.

Common Mistakes

  • Overcooking eggs.
  • Letting tortillas dry out.
  • Offering too many toppings for a quick breakfast.

Serving Suggestions

Serve with salsa, fruit, hot sauce, or breakfast potatoes. Add avocado slices or fresh cilantro at the table if you like.

Variations

  • Add chorizo.
  • Add potatoes.
  • Make vegetarian tacos with eggs, peppers, onions, and cheese.

Dietary Adaptations

  • Gluten-free: Use corn or gluten-free tortillas.
  • Dairy-free: Skip cheese.
  • Vegetarian: Use eggs and vegetables.

Scaling

For a group, set up a taco bar and cook eggs in batches.

Weather Notes

Wind cools tortillas quickly. Keep them stacked and covered after warming.

Leftovers

Extra taco fillings become wraps, quesadillas, or breakfast bowls.

Kid Helper Tasks

Kids can build their own tacos away from the hot griddle.

Dragonfly Tip

Warm tortillas last. A warm tortilla makes even simple eggs feel like a real meal.
