Around the Campfire

Smores quesadillas are a griddle-friendly way to get a camp dessert feeling without needing skewers or perfect coals. They are easy to share and useful when the fire is not part of the evening plan.

Why This Recipe Works

The Blackstone toasts the tortilla while the filling warms inside. Folding the dessert keeps it easy to slice and serve.

Quick Facts

  • Serves: 4
  • Heat zone: Low to medium-low
  • Best for: Kid desserts, rainy nights, quick sweets
  • Teaches: Low-heat dessert timing

Shopping List

  • Flour tortillas
  • Chocolate
  • Marshmallows
  • Butter
  • Optional graham cracker crumbs

Home Prep

Portion chocolate and marshmallows before the trip. Keep tortillas sealed.

Cooler Packing

Chocolate may need a cool spot in hot weather, but keep it dry.

Equipment

  • Blackstone griddle
  • Spatula
  • Knife or pizza cutter

Heat Zones

Use low to medium-low heat. A cooler zone can hold finished quesadillas while the next batch cooks.

Ingredients

  • 4 medium (8-inch) flour tortillas
  • 4 ounces milk chocolate, broken into pieces or chopped
  • 1 cup mini marshmallows
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat the griddle on low to medium-low.
  2. Evenly spread 1 ounce chocolate and 1/4 cup mini marshmallows over half of each tortilla.
  3. Fold each tortilla in half over the filling.
  4. Melt 1/2 tablespoon butter on the griddle for each quesadilla, then place the folded quesadillas onto the griddle.
  5. Cook for 2-3 minutes on one side until golden and filling begins to melt; flip and cook another 2-3 minutes until both sides are toasted and the chocolate is gooey.
  6. Remove from the griddle, let sit for 1-2 minutes for easier slicing, then cut into wedges and serve warm.

Doneness

The tortilla should be lightly crisp and the filling warm.

Common Mistakes

  • Cooking too hot.
  • Overfilling.
  • Cutting immediately before the filling settles.

Serving Suggestions

Serve after burgers, tacos, or campfire night. Top with crumbled graham crackers, a drizzle of peanut butter, or a dollop of whipped cream if desired.

Variations

  • Add 2 tablespoons graham cracker crumbs inside before folding.
  • Spread 1 tablespoon peanut butter inside with the chocolate.
  • Substitute chocolate spread for chopped chocolate.

Dietary Adaptations

  • Gluten-free: Use gluten-free tortillas.
  • Dairy-free: Use dairy-free chocolate.
  • Vegan: Use vegan marshmallows and chocolate.

Scaling

Make several and cut into wedges.

Weather Notes

Good when rain or wind makes fire desserts harder.

Leftovers

Best fresh.

Kid Helper Tasks

Kids can add chocolate and marshmallows before an adult handles the griddle.

Dragonfly Tip

Use less filling than you think. The best camp desserts are easy to hold.

Dragonfly Challenge

Make one classic and one with peanut butter. Pick the camp dessert champion.
