Ingredients
- 4 large (10-inch) flour tortillas
- 2 cups cooked chicken, shredded or diced
- 2 cups shredded cheese (such as Monterey Jack, cheddar, or a blend)
- 1/2 cup sautéed peppers and onions, diced (optional)
- 1/4 cup canned black beans, rinsed and drained (optional)
Instructions
- Preheat the griddle to medium.
- Warm 4 tortillas briefly on the griddle until pliable.
- Add 1/2 cup shredded cheese and 1/2 cup cooked chicken to one half of each tortilla.
- If using, spoon about 2 tablespoons sautéed peppers and onions and 1 tablespoon black beans over each.
- Fold tortillas in half and cook until the first side is golden and crisp, about 2-3 minutes.
- Flip with a spatula and cook the other side until the cheese melts and the tortilla is golden brown, about 2-3 minutes more.
- Remove from the griddle, let rest 1 minute, then slice into wedges and serve.
Doneness
Chicken should be hot throughout. If cooking chicken from raw, cook it to 165°F before assembly.
