Campfire Quesadillas

Tortilla, cheese, fire — that's the floor, and everything past it is a bonus. Quesadillas are the easy meal that feels like more than it is, and everyone can build their own.
Ingredients
- Flour tortillas
- Shredded cheese
- Optional fillings: pre-cooked chicken, beans, peppers, onions
- Salsa or sour cream to serve
Steps
- Sprinkle cheese (and any fillings) over half a tortilla and fold it over into a half-moon.
- Cook on a skillet or griddle over coals — not flames — until the bottom is crisp and golden, then flip and crisp the other side while the cheese melts.
- If you're adding meat, use pre-cooked chicken or anything already cooked — a quesadilla cooks fast and won't cook raw meat through. (Foil-on-coals or a pie iron both work too.)
- Slide it off, cut into wedges, and serve with salsa. Let everyone fill their own.

Pre-cook any meat
A quesadilla crisps in a couple of minutes — nowhere near long enough to cook raw chicken or beef through. So any meat goes in already cooked (leftover rotisserie chicken is perfect). Cook it on a skillet or griddle over coals, not flames, so it crisps instead of scorches.
