Around the Campfire

Loaded cauliflower gives you the flavor of a loaded potato side with a lighter vegetable base. It is familiar enough for kids and useful beside burgers, chicken, steak, or rice bowls.

Why This Recipe Works

The Blackstone browns and warms cauliflower while toppings finish the dish at the end. Cheese and bacon work best after the vegetable is already tender.

Quick Facts

  • Serves: 4
  • Heat zone: Medium
  • Best for: Hearty sides, burger nights, low-carb plates
  • Teaches: Tender first, top second

Shopping List

  • Cauliflower
  • Cheddar
  • Bacon
  • Green onions
  • Butter or oil

Home Prep

Cut cauliflower into small florets before the trip. Cook bacon ahead if desired.

Cooler Packing

Keep cheese and bacon cold. Keep cauliflower dry and sealed.

Equipment

  • Blackstone griddle
  • Spatula
  • Tongs

Heat Zones

Use medium heat and give the vegetables room to caramelize rather than steam.

Ingredients

  • 1 large head cauliflower (about 2 pounds), cut into small florets
  • 2 tablespoons butter or oil
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, thinly sliced

Instructions

  1. Preheat the griddle to medium.
  2. Add 2 tablespoons butter or oil to the griddle. Spread out 1 large head cauliflower florets and cook for about 15 minutes, turning occasionally, until browned and tender.
  3. Sprinkle 1 cup shredded cheddar cheese and 4 slices cooked, crumbled bacon evenly over the cauliflower.
  4. Cover with a melting dome or foil pan and cook for 2-3 minutes, until the cheese is melted.
  5. Remove from heat and top with 2 sliced green onions.

Doneness

Cauliflower should be tender and hot throughout.

Common Mistakes

  • Cutting florets too large.
  • Adding cheese before cauliflower is tender.
  • Crowding the griddle.

Serving Suggestions

Serve with burgers, pork chops, steak, or chicken. Add sour cream or jalapenos at the table if desired.

Variations

  • Add sour cream at the table.
  • Use pepper jack.
  • Add jalapenos.

Dietary Adaptations

  • Gluten-free: Verify toppings.
  • Dairy-free: Skip cheese.
  • Vegetarian: Skip bacon.

Scaling

Cook cauliflower in batches for larger groups.

Weather Notes

Wind can slow tenderness. Keep pieces small.

Leftovers

Use leftovers in bowls, omelets, wraps, or hash.

Kid Helper Tasks

Kids can sprinkle cheese and green onions after the hot cooking is done.

Dragonfly Tip

Small florets cook faster and load better.

Dragonfly Challenge

Try one side loaded and one with just garlic butter. Pick the better camp vegetable.
