Around the Campfire

Camp Reuben bowls give you the flavor of a hot Reuben without needing to press sandwiches for everyone. Corned beef, sauerkraut, Swiss, and dressing make a rich, quick camp meal.

Why This Recipe Works

The griddle warms the beef and sauerkraut while the cheese melts at the end. Dressing stays off the griddle so it finishes the bowl instead of burning.

Quick Facts

  • Serves: 4
  • Heat zone: Medium
  • Best for: Reuben flavors, bowl dinners, no-bread meals
  • Teaches: Warm filling with cool finish

Shopping List

  • Corned beef
  • Sauerkraut
  • Swiss cheese
  • Thousand Island dressing

Home Prep

Drain sauerkraut and portion beef, cheese, and dressing before the trip.

Cooler Packing

Keep beef, cheese, sauerkraut, and dressing cold in sealed containers.

Equipment

  • Blackstone griddle
  • Spatula
  • Optional melting dome

Heat Zones

Use medium heat for the bread; move it to a cooler zone if the bread browns too fast.

Ingredients

  • 12 ounces cooked corned beef, chopped or sliced
  • 2 cups sauerkraut, drained
  • 4 ounces Swiss cheese, sliced or shredded
  • 1/2 cup Thousand Island dressing

Instructions

  1. Preheat the griddle to medium.
  2. Warm 12 ounces corned beef until hot, about 3-4 minutes.
  3. Add 2 cups drained sauerkraut and warm briefly with the beef, about 2-3 minutes.
  4. Top everything with 4 ounces Swiss cheese and allow it to melt (cover with a dome if needed), about 2 minutes.
  5. Move to bowls.
  6. Finish with 1/2 cup Thousand Island dressing drizzled over each bowl.

Doneness

Beef and sauerkraut should be hot throughout and cheese melted.

Common Mistakes

  • Using wet sauerkraut.
  • Heating the dressing on the griddle.
  • Overcooking thin corned beef.

Serving Suggestions

Serve with rye toast, potatoes, pickles, chips, or salad.

Variations

  • Serve over potatoes.
  • Add pickles.
  • Use turkey for a lighter bowl.

Dietary Adaptations

  • Gluten-free: Serve without rye and verify dressing.
  • Dairy-free: Skip Swiss.
  • Low-carb: Serve as written.

Scaling

Warm beef and kraut in batches and build bowls at the table.

Weather Notes

Wind can slow melting; use a cover if needed.

Leftovers

Store dressing separately from the warm ingredients.

Kid Helper Tasks

Kids can add dressing and pickles away from the griddle.

Dragonfly Tip

Drain the sauerkraut well. Wet kraut makes the bowl watery.

Dragonfly Challenge

Try one bowl over potatoes and one without. Pick the better camp version.
