Ingredients
- 4 large (8-inch) flour tortillas
- 6 large eggs
- 1 cup shredded cheddar cheese
- 8 slices bacon
Instructions
- Cook 8 slices bacon on the griddle over medium heat until crisp. Remove, drain on paper towels, and chop.
- Crack 6 eggs into a bowl and whisk. Pour onto the griddle and scramble until just set. Remove eggs from heat.
- Place 4 large flour tortillas on the hot griddle.
- Evenly divide scrambled eggs, chopped bacon, and 1 cup shredded cheddar cheese among the tortillas, spreading over half of each tortilla.
- Fold each tortilla in half to cover the filling. Cook 2–3 minutes until the bottom is golden and crisp.
- Carefully flip each quesadilla. Cook another 2–3 minutes until both sides are crisp and cheese is melted.
- Remove from griddle. Slice each into wedges using a knife or pizza cutter. Serve hot.
