  • 4 large (8-inch) flour tortillas
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 8 slices bacon

Instructions

  1. Cook 8 slices bacon on the griddle over medium heat until crisp. Remove, drain on paper towels, and chop.
  2. Crack 6 eggs into a bowl and whisk. Pour onto the griddle and scramble until just set. Remove eggs from heat.
  3. Place 4 large flour tortillas on the hot griddle.
  4. Evenly divide scrambled eggs, chopped bacon, and 1 cup shredded cheddar cheese among the tortillas, spreading over half of each tortilla.
  5. Fold each tortilla in half to cover the filling. Cook 2–3 minutes until the bottom is golden and crisp.
  6. Carefully flip each quesadilla. Cook another 2–3 minutes until both sides are crisp and cheese is melted.
  7. Remove from griddle. Slice each into wedges using a knife or pizza cutter. Serve hot.
