Around the Campfire
Beef tacos are one of the most reliable camp dinners because everyone knows what to do when the tortillas hit the table. The cook handles the beef and warm tortillas; everyone else builds their own plate.
This recipe teaches quick protein cooking and topping-bar setup, two of the best ways to keep dinner moving outdoors.
Why This Recipe Works
Ground beef browns quickly on the Blackstone, and the griddle has enough space to warm tortillas while the meat finishes.

- Scraper
- Tongs
- Instant-read thermometer
Heat Zones
Use medium-high for beef and a cooler zone for tortillas.
Ingredients
- 2 pounds ground beef (80/20 recommended)
- 3 tablespoons taco seasoning (homemade or store-bought)
- 8 small flour or corn tortillas (6-inch size)
Instructions
- Preheat the griddle to medium-high.
- Add 2 pounds ground beef to the griddle. Cook, breaking it up with a spatula, until browned.
- Sprinkle 3 tablespoons taco seasoning over the meat and mix well. Cook until beef reaches an internal temperature of 160°F, about 8–10 minutes total.
- While beef finishes, place 8 tortillas on a cooler zone of the griddle, flipping once, until pliable and heated through—about 30 seconds per side.
- Transfer tortillas to a plate and cover to keep warm. Remove beef from the griddle and transfer to a serving dish.
- Set out all taco toppings.
- Serve tacos immediately.
Doneness
Ground beef should reach 160°F.
Common Mistakes
- Adding wet toppings to the griddle.
- Letting tortillas dry out.
- Forgetting to set toppings out before the beef is done.
Serving Suggestions
Serve with cheese, lettuce, salsa, chips, corn, rice, beans, or optional sour cream, onions, and hot sauce.
Variations
- Add peppers and onions.
- Use crunchy taco shells at the table.
- Turn leftovers into breakfast tacos.
Dietary Adaptations
- Gluten-free: Use corn tortillas and verified seasoning.
- Dairy-free: Skip cheese and sour cream.
- Low-carb: Serve as taco bowls or lettuce cups.
Scaling
For groups, cook beef in batches and keep tortillas stacked and covered.
Weather Notes
Wind cools tortillas quickly. Warm them last and keep them covered.
Leftovers
Leftover taco meat is excellent in breakfast burritos, nachos, quesadillas, or rice bowls.
Kid Helper Tasks
Kids can set toppings, count tortillas, and build their own tacos.
Dragonfly Tip
Set the taco bar before the meat finishes. Once the beef is ready, dinner should move quickly.
Dragonfly Challenge
Build one soft taco and one taco bowl. Pick the better campsite version.
