Instructions
- Preheat the griddle to medium.
- Add 4 cups corn kernels in a single layer. Cook, stirring occasionally, until hot and lightly browned, about 8–10 minutes.
- Add 2 tablespoons unsalted butter and toss briefly until melted and corn is glossy, about 1 minute.
- Move corn to a serving bowl or a cooler zone of the griddle.
- Sprinkle 1/2 cup crumbled cotija cheese and 1 teaspoon chili powder over the corn, and finish with a squeeze from the lime wedges.
