Around the Campfire

Orange cranberry pancakes are a bright campsite breakfast for mornings when plain pancakes feel too ordinary. Dried cranberries travel well, and orange zest makes the batter feel fresh.

Why This Recipe Works

Medium-low heat gives pancakes time to set while the cranberries warm and the orange aroma comes through.

Quick Facts

  • Serves: 4
  • Heat zone: Medium-low
  • Best for: Sweet breakfasts, cool mornings, simple upgrades
  • Teaches: Fruit add-in balance

Shopping List

  • Pancake mix
  • Dried cranberries
  • Orange zest
  • Syrup

Home Prep

Measure pancake mix and cranberries before the trip. Zest orange at camp or pack zest in a small container.

Cooler Packing

Keep mix and cranberries dry. Oranges can ride outside the cooler.

Equipment

  • Blackstone griddle
  • Spatula
  • Mixing bowl

Heat Zones

Use medium-low heat. Give the centers time to set before the outsides over-brown.

Ingredients

  • 2 cups pancake mix (for a "just add water" style mix)
  • 1 1/2 cups water (or amount directed by your pancake mix)
  • 1/2 cup dried cranberries
  • 2 teaspoons orange zest (from 1–2 medium oranges)
  • 2 tablespoons sugar (optional, for a sweeter pancake)

Instructions

  1. Preheat the griddle to medium-low.
  2. In a mixing bowl, combine 2 cups pancake mix and 1 1/2 cups water (adjust as needed for your mix).
  3. Fold in 1/2 cup dried cranberries and 2 teaspoons orange zest. Stir in 2 tablespoons sugar if using.
  4. Pour batter onto the griddle in 1/3-cup portions.
  5. Cook until edges set and bubbles form on the surface, about 2–3 minutes.
  6. Flip once and cook through, about 1–2 minutes more.
  7. Serve hot with syrup.

Doneness

Pancakes should be set in the center and lightly browned.

Common Mistakes

  • Cooking too hot.
  • Adding too many cranberries.
  • Flipping before the edges set.

Serving Suggestions

Serve with bacon, sausage, fruit, yogurt, coffee, or a drizzle of maple syrup.

Variations

  • Add 1/3 cup white chocolate chips to the batter.
  • Use 1/2 cup blueberries in place of cranberries.
  • Stir 1/2 teaspoon cinnamon into the batter.

Dietary Adaptations

  • Gluten-free: Use gluten-free pancake mix.
  • Dairy-free: Use dairy-free batter.
  • Vegan: Use vegan batter if desired.

Scaling

Cook in batches and hold finished pancakes on a cooler zone.

Weather Notes

Cold mornings may need a longer preheat.

Leftovers

Use leftovers as snack pancakes with jam or nut butter.

Kid Helper Tasks

Kids can stir cranberries into batter and choose toppings.

Dragonfly Tip

Dried cranberries are easier at camp than fresh berries because they do not leak into the cooler.

Dragonfly Challenge

Try one batch with orange zest and one without. Pick the brighter camp pancake.
