Around the Campfire
A ham and cheese scramble is the kind of breakfast that earns its place because it is simple, fast, and hard to complain about. It works when the morning plan is already full and you need something warm before the day gets moving.
This recipe teaches gentle egg cooking on a flat top. The goal is soft eggs, warm ham, and melted cheese without drying everything out.
Why This Recipe Works
The Blackstone lets you warm the ham first, then fold eggs and cheese together quickly. A cooler zone gives you a place to pause if toast or potatoes are still finishing.

Home Prep

Equipment
- Blackstone griddle
- Spatula
- Bowl for eggs
Heat Zones
Use medium-low heat for eggs. Keep ham on a slightly warmer spot and eggs on the gentler side.
Ingredients
- 8 large eggs
- 1 cup (about 5 ounces) diced cooked ham
- 1 cup (about 4 ounces) shredded cheese (cheddar, Swiss, or pepper jack)
- 2 tablespoons butter or cooking oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the griddle to medium-low.
- Spread 1 tablespoon of butter or oil on the griddle.
- Add 1 cup diced ham and warm for 2–3 minutes, stirring occasionally.
- Move the ham to a cooler zone.
- In a bowl, beat 8 eggs with 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Add the remaining 1 tablespoon butter or oil to the egg area of the griddle.
- Pour eggs onto the griddle. Gently fold with a spatula as they begin to set.
- Scatter warmed ham and 1 cup shredded cheese over the eggs.
- Fold ingredients together until eggs are just set and cheese is melted, about 1–2 minutes.
- Serve immediately.
Doneness
Eggs should be set but not dry.
Common Mistakes
- Cooking eggs on heat that is too high.
- Adding cheese too early.
- Walking away from eggs once they hit the griddle.
Serving Suggestions
Serve with toast, hash browns, tortillas, or fruit.
Variations
- Add 1/2 cup diced bell peppers or onions when cooking ham.
- Use different cheeses: cheddar, Swiss, or pepper jack.
- Wrap in tortillas for breakfast tacos.
Dietary Adaptations
- Gluten-free: Serve without toast or use gluten-free bread.
- Dairy-free: Skip cheese.
- Vegetarian: Replace ham with vegetables.
Scaling
Cook larger batches in smaller waves so eggs stay tender.
Weather Notes
Wind can cool thin eggs quickly. Keep the egg area compact.
Leftovers
Use leftovers in wraps, melts, or breakfast bowls.
Kid Helper Tasks
Kids can sprinkle cheese, count eggs, or set tortillas and plates.
Dragonfly Tip
Eggs keep cooking after you pull them off the heat. Stop a little earlier than you think.
