  3. Warm 3 cups cooked rice on a clean area of the griddle, stirring frequently, until heated through, about 3–5 minutes.
  4. Build bowls with a generous scoop of rice and a portion of gyro meat.
  5. Top each bowl with 1/4 cup cherry tomatoes and 1/4 cup diced cucumber.
  6. Finish each bowl with 2 tablespoons tzatziki.
  7. Serve immediately.
