  3. Place 8 split biscuits, cut side down, on the griddle with 1 tbsp butter or oil. Toast until golden, then flip to warm through. Move to a holding zone or cover loosely.
  4. Add the remaining 1 tbsp butter or oil to the griddle. Crack 8 eggs onto the griddle (or scramble if preferred). Cook until set.
  5. Sprinkle 1 cup shredded cheddar cheese over eggs while still hot, so it melts.
  6. Assemble biscuit sandwiches or serve skillet-style with sausage, eggs, and cheese layered.

Eggs should be set. Sausage cooked from raw should reach 160°F.
